CIDERS AND WINES

2023 Piquette Cider 

500ml

900 bottles. Lightly sparkled dry cider.  3% abv.  Pomace from our 2023 Cider macerated with water for 2 days, pressed off into stainless steel, and bottled with a bit of sweetness still in it after a quick fermentation.  We make this in small batches, so there’s quite a bit of variability, some with peaches, some with pear, all of it super fun effervescent fruit.

2024 Piquette Red Wine 

500ml

168 bottles. Dry pink bubbles.  5% abv.  Pomace from our 2024 Red Wine macerated with water for 2 days, pressed off into stainless steel, and bottled with a bit of sweetness still in it after a quick fermentation. A bit of fresh apple juice to bolster fermentation.  Beautiful, flowery aromatics.

2023 Cider Purple Label  

750ml

240 bottles. Still dry cider.  7% abv.  Many varieties of apple grown by Ellen and Selena at Future Fruit Farm in Ridgeway, WI.  They harvested the apples in 2022 and aged them for a year before selling them to us in 2023.  7 day maceration, 1 year in barrel, aged in bottle 3 months before selling.  This cider is big, round, rich, and elegant with beautiful acidity.

2023 Cider Green Label

750ml

960 bottles. Still dry cider.  7% abv.  Wild apples from our farm plus cider and eating apples grown by 2 of our partner farms, Down Home Farm in Readstown and Co-maker Apple Farm in Osceola.  More than 25 varieties of apple in this cider.  3-7 day macerations, 1 year in barrel, aged in bottle 6 months before selling.  We love the extraction we got in maceration on this one - reminds us of a savory orange wine.

2023 Cider Bunnies

750ml

480 bottles. Still dry cider.  7% abv.  More apples from Down Home Farm in Readstown and Co-maker Apple Farm in Osceola along with a bunch of wild apples we picked at our neighbors/friends Dani and Mike’s place.  3-7 day macerations, 1 year in barrel, aged in bottle 6 months before selling.  Earth, mushroom, deep apple nectar…this one has a feeling of place.

2023 Cider Gigi

750ml

216 bottles. Still dry cider.  7% abv.  More high-toned apples from Blue Roof Orchard in Belmont, but this time fermented and aged in new oak, which balances the brightness of the apples beautifully.  3-7 day macerations, 1 year in barrel, aged in bottle 6 months before selling.  We are newcomers to new oak, or maybe we are returning to it after being gone from it for so many years.  It’s so fun with apples!

2023 Cider Swimmers

750ml

480 bottles. Still dry cider.  7% abv.  Most of the apples for this cider come from Blue Roof Orchard in Belmont, whose apples are high-toned, bright, and very energetic.  Also some more apple-y apples from our friends and neighbors at Down Home Farm in Readstown. 3-7 day macerations, 1 year in barrel, aged in bottle 6 months before selling. Delightfully reminds us of a super crisp sauvignon blanc.

2023 Red Wine  

750ml

Dry red wine.  11% abv.  Mostly Marquette from our friends Ann and Bill Redmer in Orfordville, WI.  1 week whole cluster maceration, 1 year in barrel, aged in bottle for 9 months.  2023 was such a good year for grapes.  We got some super satisfying savory depth out of this one.

2023 Cider Red Clover

Still dry cider.  7% abv.  Red Clover Ranch collaboration!!  Way back when, Elise and Tony got married at Red Clover and Annie (Red Clover owner/head wrangler) officiated - so stoked to have this cider come together!  Many varieties of wild apples from their abundant and diverse ridgetop orchard.  3-7 day macerations, 1 year in barrel, aged in bottle 6 months before selling.  So much going on here: floral savoriness with a profoundly satisfying energetic acidity.
