CIDERS AND WINES

2024 Hugo’s Jugo
Still, dry cider. 750ml. 6.5% abv.
Made entirely from our wild apples ripening at the same time as elderberries, aronia berries, and sumac, which we added in small amounts, giving this cider some beautiful tannins and a spicy acidity. Named after our son, who is himself a juice of a most curious sort and who spends much of harvest raiding the cave, leaving apples around in various stages of having been eaten.

2024 Red Clover
Still, dry cider. 750ml. 7% abv.
Many varieties of wild apples from Red Clover Ranch’s abundant and diverse ridgetop orchard, picked by Elise and Tony. Continuous with the 2023 vintage: floral savoriness with an energetic acidity, but in 2024 that acidity is beautifully balanced with an elegant roundness. Kinda fancy. Hand-crushed.

2024 Palomita
Still dry cider. 750ml. 6.5% abv.
The first cider we’ve made entirely from our wild apples from our farm. The apples were smaller, lower on sugar, and stunningly dynamic. Palomita has a profoundly bracing salty tartness and a racy acidity kept from soaring into outer space by a touch of earth. Named after our circus performer daughter whose own flight makes us wonder where the ground begins and ends.

2024 Silvia
Still, dry cider. 750ml. 7% abv.
Made from mostly Golden Russets macerated on top of Arkansas Blacks from Down Home Farm, with St. Edmund’s Russets from Blue Roof Orchard and tannic wild apples from farmer Jacob Byler. A touch of green apple set against the elegant rustiness of the Russets and the deep sugars of the Arkansas Blacks. A gentle smell of the sea and the kind of revolutionary spirit embodied by the feminist scholar it’s named after.

2024 Red Wine |Sold out|
Dry, red wine. 750ml. 10% abv.
Mostly Marquette from our friends Ann and Bill Redmer in Orfordville, WI. They had a rough growing season with lots of hail and black rot loss. As the birds honed in on their crop, they decided to pick early, so we macerated for a full month to balance the underripe fruit and topped up with some fresh apple juice. Gorgeous fresh red wine with subtle tannins and structure.

2024 Gigi
Still, dry cider. 750ml. 7% abv.
More extraction, more depth, more complexity than 2023. Rich aromas of gardenia, bitter orange peel, and a touch of oxidation, all playing wondrously with the flavor of new oak. Hand-crushed.

2024 Swimmers
Still, dry cider. 750ml. 7% abv.
Made from mostly chestnut crabapples from Co-Maker Apple Farm. Beautiful crisp aromatics just like 2023, but with a golden hue, more roundness, and a touch of spice on the finish. While 2023 had direct press sauvignon blanc vibes, this feels like lightly macerated sauvignon or even chenin.

2023 Piquette Cider
Sparkling off-dry cider. 500ml. 3% abv.
